Ingredients:
1 cup of rice (easy cook is best)
1 cup water
1 cup milk
50g diced bacon
1 cube of frozen spinach/1 good handful fresh spinach
1 heaped desert spoon of cream cheese
25g-35g grated cheese
Pinch black pepper.
Start be placing the bacon and spinach in a large plastic bowl and microwave on full power for 2 minutes.
Remove from microwave and stir. Add rice, water and milk to bowl. Stir and then microwave for a further 8 minutes.
Remove from microwave and stir, almost all of liquid should have been absorbed by rice and rice should be cooked, if not, put back in microwave for 3 minutes. Repeat this step until liquid is almost all absorbed and rice is cooked.
Add cream cheese, grated cheese and black pepper and stir until cheese is melted.
Serve and enjoy!
